We are a company that makes ice cream and ice cream products. In order to get our products in the hands of our customers, our ice cream is transported by truck all over the country. Some of these trucking routes pass over the Rocky Mountains, resulting in increases and decreases in altitude. As the ice cream goes through these altitude changes, the ice cream itself will shrink and expand. This can result in negative consequences like misshapen ice cream in the carton, or lids that pop off the ice cream containers due to expansion.

We are looking for ways to alter our ice cream recipes to limit the shrinking/expanding that occurs when ice cream is transported over the Rockies.

Deliverables

Please submit the following:

1) Propose one, or multiple ingredients that could be added to our ice cream recipes to reduce the shrinking and expanding that occurs with changes in altitude.

2) Explain why/how your ingredient(s) suggestions would have the effect of limiting expansion and shrinking during changes in altitude.

3) Include any research you used to help you come up with your solution.

Criteria: Keep the following in mind when solving:

1) Do not propose taking air out of the ice cream as your solution. This is technically a solution, but is expensive and not applicable for this challenge.

2) Ingredients must be FDA approved and safe for our consumers.
